Cafe Rio in Texas

Don't get too excited you Texans, there still is nothing like Cafe Rio here, but yesterday I made the Cafe Rio recipes from this blog and it was pretty legit. Most of you may already have recipes you like, but I have tried several and these were the most delicious... Sorry no pics, I ate the yumminess before I thought to take a picture...

I don't know you, but I've been missing Cafe Rio, too. I just discovered a Cafe Rio knock off here in the Dallas/Fort Worth area. It's called Costa Vida, and it's almost a mirror copy cat of Cafe Rio. The manager said it started in Provo, UT. Anyway, it's got the sweet pork, the yummy salads, and the smothered burritos you may have been craving. I will say their tomatillo dressing tastes more like ranch dressing with tomatillo (I like Cafe Rio's dressing better). But I hope it satisfies your cravings. It's in Colleyville.
