
These girls and those nights have changed my life and made it better! In the next few weeks half of them are moving on to residency programs (sniff, sniff, tear) and I just wanted to Blog proclaim my love to them. You girls are FABULOUS, and I will miss you all!
Last night we had a farewell dinner and gorged on pasta so delicious I dreamed about it.
I will have to get the recipes soon. In the mean time, here is the recipe for the Panna Cotta I made.
I forgot how much I loved Panna Cotta when I worked at Sundance. Its like a fool proof custard.
Yummers!
2 tsp Unflavored Gelatin (1 packet)
3 Tbsp Cold Water
2 Cups Heavy Cream
1 Cup Plain Greek Yogurt
1/2 Cup Sugar
1/2 Tsp Vanilla or 1 -2 Vanilla Beans
1/2 Tsp Vanilla or 1 -2 Vanilla Beans
(I used Tahitian Vanilla Bean I got from a friend- AmAZinG!)
Sprinkle Gelatin over water and let it soften for about ten minutes.
In a sauce pan mix 1 cup cream, sugar and vanilla bean. Bring to a simmer.
In a bowl mix 1 cup cream and yogurt.
Once the cream and sugar are simmering, remove from heat and stir in gelatin until it has dissolved. Add mixture to the yogurt and mix well. Pour into 6 ramekins and chill for at least 6 hours.
For the Strawberries
Slice up 1 lb. Strawberries
Add 3 Tbsp Balsamic Vinegar
1 1/2 Tbsp Sugar
1/2 tsp. Freshly Ground Pepper-
(Sounds weird, but it was subtle and delightful)
Stir together and let it sit for 30 minutes before serving.
Serve the Panna Cotta in the dish or put the ramekin in hot water for 30 seconds, turn it upside down on a plate and shake it to release it. Top it with Strawberries and enjoy!!

Aww, I am going to miss this so much! I have often thought how great it was that you started this whole thing -- it has been the highlight of my month for a long time. I will miss everyone!

I am so glad that you have found such a great group of girls. I love good book clubs. Sad that half are leaving you. That will be you guys soon though. Is Kev going to try for a residency there? I need to call you and catch up big time.

So sad about bookclub. It was definitely my highlight in San Antonio. I love the friends and love the food, I know you may have thought I love the food more, but no, you all win, although the food is following close behind. :)
